摘要

Glial fibrillary acidic protein (GFAP) is a suitable cellular marker for the analysis of central nervous tissue. By means of two slightly different sandwich enzyme immuno assays it is possible to detect GFAP in raw meat as well as in meat products at high sample frequency. It could be shown, that there is a transfer of spinal cord to mechanically recovered meat produced by means of modern techniques (detection limit < = 0,1 %). Beef manually recovered from cattle vertebral column appeared to be largely free of central nervous system tissue (CNS) in form of spinal ganglions (< 0,1 %), as it could not be detected by means of sandwich enzyme immuno assay. CNS was only detectable in meat products which were manufactured by means of 100 % mechanically recovered pork and heat treated at F-values not essentially higher than 0,4.
