摘要

Raw material quality is a key factor in fresh-cut production,thus the need to specify minimum acceptable quality standards for the different commodities received by the processors. Lettuce that fails to meet the minimum standard is not usually accepted for processing. Beyond this standard, most of the quality control emphasis by the processor is on improving postharvest handling; typically cut-to-cool time, speed of cooling, storage time prior to processing and good manufacturing practices.
