Scotland's salmon farming industry has experienced unprecedented success in recent years. Scottish salmon is now our country's largest food export, reaching 60 countries worldwide. The increase in the value of our exports has helped the planned growthof food and drink exports exceed its budgeted target for several years. In recent years, the Scottish salmon industry has demonstrated a significant turn-around in its aspirations and its confidence. Following a third successive annual increase in totalproduction, a survey of the industry's member companies conducted at the end of 2011 revealed that 86% expressed a desire to grow sustainably over the next five years and, at the same time, to increase staffing levels com-mensurately. This is a remarkable statement of intent for an industry which has undergone significant consolidation and, in the early part of the last decade, saw its total production decline.
