ACCORDING to the Oxford English dictionary, the name halibut derives from haly (holy) and butt (flat fish) for its popularity on Catholic holy-days, so it is wholly appropriate that Scotland's largest halibut farm is on 'God's Island', Gigha, just a few miles off the Mull of Kintyre. Gigha Halibut is the result of years of persistence by Alistair Barge, from Otter Ferry. He has stuck steadfastly to the concept of pump-ashore aquaculture since the family fish farm was first set up on the shores of Loch Fyne in the late 1960s and it looks as if his patience may well have paid off.
