Food laws and regulations throughout the world mandate that manufacturers of foods and ingredients produce safe and wholesome products. The products that are manufactured must be of acceptable quality and be produced at a reasonable cost. If they areproducts manufactured for the retail market, they must be appealing in another way; consumers must feel comfortable with the products that they buy, They must also meet a consumer need, whether that need is for fresh, organic, or healthy products or for one of the dozens of other criteria that determines what people purchase, This is why there has been such an expansion of products such as fresh-cut vegetables, fresh pastas, and natural foods.
