As soon as the first Toast Cafe opened in Huntersville, N.C., customers started holding business meetings at the restaurant over stuffed French toast or flavored flapjacks.Eventually, customers started asking for breakfast items to be delivered to their offices for meetings, and the breakfast catering business was born for Toast Cafe, now a four-unit breakfast concept. "It was not our idea to do catering from day one, butto run a restaurant," says Robert Maynard, who founded the restaurant with his best friend, Brian Burchill. "But we see the future. We should be able to do 30 to 40 percent of sales in catering. It is there for the taking."
