Forecasts on US food consumption and spending up to year 2020 are presented. The forecasts reveal that: shifts in age distribution dominate demographic effects; growing ethnic diversity has mixed implications for consumption; income is the most important driver of per capita food expenditures; educational attainment enhance dietary knowledge; income and demographic effects boost fruit, vegetable, and fish consumption; population growth drives total food demand; food consumers will demand more quality, not more quantity; away-from-home market share will rise for meat, fish, eggs, fried potatoes, and lettuce, while the at-home market share of fruit would rise; and a well-off and ethnically diverse nation will demand variety.
