The production of extracellular inulinase by Aspergillus niveus 4128URM isolated from sunflower rhizosphere, and the properties of the enzyme were investigated. Inulinase, which was produced by A. niveus in a culture medium containing inulin as substrate, was dependent on inulin concentration and fermentation time. The maximum inulinase activity was significantly superior at inulin concentrations of 15 and 20 g/litre at 72 h of incubation. However, the best inulin concentration for inulinase production was 20 g/litre after 72 h of incubation. The optimum pH for inulinase production were 4.0 and 4.8, and the optimum temperature was 45 degrees C. Using Sephadex G-75 chromatography, inulinase was purified 34.65-fold, yielding 53.63%. It is suggested that A. niveus 4128URM could be a promising strain for inulinase production in food industries..
