Unfortunately, if you are not Santa Claus, magic and elves are not options to help with holiday production. For most chocolate, candy and other related specialty food manufacturers, the months between October and December represent ramped up production, an expansion of special product varieties and an overall need to produce more and quicker. Specialty food manufacturers generally prepare for increased and peak holiday production expectations based on previous order histories and precedence. Many begin their preparations as early as August. According to Marty Dennis, director of operations for The Popcorn Factory, the company's higher production is scheduled and based on volume projections for the holiday season. Bill Sarris, CEO of Sarris Candies, uses the previous year's sales history to help estimate production. "We have the capacity to produce quickly, so if we need some- thing quickly, we can do it without any issues," he added.
