Kinnow is the predominant fruit of the citrus industry in north-western India. Its vigorous growth habit, profuse bearing, heavy yield, flavour, colour, size and excellent quality have lured the producers as well as consumers. In Punjab, citrus cultivation is virtually kinnow monoculture and because of late ripening of the fruits, the farmers have to face its marketing problem. The physico-chemical studies in developing fruits of kinnow have proved that it attains desirable level of soluble solids by the October-end. But owing to high total acids, fruits remain sub-acidic in taste till mid-January. Attempts have been made to reduce the acidity in developing fruits using arsenate compounds in citrus fruits (Deszyck and Sites, 2; Wilson and Obreza, 6), so that early maturity standards are met. However, such information are not available in kinnow. Therefore, an experiment was conducted to know the effect of sodium arsenate on lowering total acidity in kinnow.
