A collaborative study by the New Zealand Food Safety Authority and the Fonterra Co-operative Group is looking into the scientific underpinnings of pasteurisation. Dr Lisa Gallagher, from the Science Group of the New Zealand Food Safety Authority, andDr Mike Donkin, Fonterra's Food Assurance Manager, explain the project. It is no under-statement to say that the dairy industry is important to New Zealand, as dairy products are the country's largest export category.The New Zealand Food Safety Authority (NZFSA) is responsible for regulating the dairy industry in NZ. It is committed to providing a flexible regulatory framework in which the industry can operate, while protecting the health of consumers.
