Armed with a best-seller in its new chicken rice mix, sauce specialist Sin Hwa Dee is set bring a taste of Singapore to the world. Managing director Jocelyn Chng shares her vision with APFI. Asian seasoning sauces are said to be the one of the fastest growing sectors in the international food industry. In Singapore, one of the most prominent sauce manufacturers and exporters is Sin Hwa Dee Foodstuffs Pte Ltd, which markets its sauces under the label Chng Kee's, better known as Kee's. Recently, the company caused a sensation by launching a ready mix for Hainanese chicken rice, Singapore's avowed national dish. Created by a Singaporean of Hainanese descent, the highly popular dish consists of rice cooked in a complex chicken stock, served with fragrant blanched chicken. Served at outlets all over the island from humble food courts to five-star hotels, chicken rice is nonetheless uncommon in homes as it requires a long and tedious preparation method.
