One key difference between the meat we eat and the fish we eat is the variety of species. In 2008, beef (and a couple of other ruminants), pork and chickens made up almost 90% of all livestock produced -three species. In contrast, a ranking, by volume, of the top fish and shellfish species produced (fisheries 6c aquaculture) shows that the top 40 species constitute less than 50% of the total volume of fish and shellfish species produced in 2010. This difference between the variety of aquatic speciesversus land animal products we eat is reflected in the variety of aquatic species produced, numbering in the dozens, with 15 species produced in quantities of over 1 million tonnes in 2010.
