Overseas markets maintain demand for U.S. dairy byproducts, citing numerous uses. The United States exports a huge amount of dairy Ingredients. According to the U.S. Dairy Export Council of Arlington, Virginia, in 2001 the United States exported 170,505 metric tons of whey proteins; 127,213 metric tons of lactose; 106,310 metric tons of skim milk powder; 2,409 metric tons of yogurt; and 1,464 metric tons of butter oil. The total dollar value of dairy export sales reached over 1 billion dollar in 2001, the third consecutive year sales outpaced those of the previous year. Every cheese maker knows that the largest byproduct of producing cheese is whey. In fact, 10 pounds of whole milk are required to produce one pound of cheese; the other nine pounds become whey, a protein with many uses. The United States exports both high-and low-protein varieties of whey, used in many applications from animal feed to protein enhancers for food products.
