摘要

Pectolytic enzymes are used in the food industry to clarify fruit juices and to obtain higher yields. They are also used in the wine industry to acquire higher volumes of must and wines of high quality with better brightness and aroma. In the feed industry, they are used as additives. Currently, investigations are under way involving the genetic aspects of enzyme production by microorganisms and fermentation techniques. Enzyme extraction and purification are necessary steps in the course of biotechnological development to obtain products that are applicable to different industrial food processes.
