摘要

A chromatographic method for isolation of different isoforms of Bowman-Birk-type soybean inhibitors has been developed. The number of isoforms present depends on the strain of soybeans used. The content of the classical Bowman-Birk soybean inhibitor (BBI) in soybeans of different strains, commercial soybean flour, and other soybean products was investigated. The largest amount of BBI found in fresh milled soybeans. The storage conditions of soybean raw materials have been optimized to save the highest inhibitory activity. We show that indirect immuno enzyme analysis can be used for detection the BBI fraction during isolation of BBI from different sources.
