Toxicological emergencies in fish products: Introduction

摘要

As with several other foods, seafoods have also avoided the interest of consumers since the mass media have emphasized their potential contamination with several chemical pollutants. Information on such topics is often not presented by the media in an objective way or with due care for accuracy, which has given concern to Italian producers because of the potential adverse influence on trade. In order to provide reliable scientific information on this matter, the Scientific Committee of SISVet (Italian Society of Veterinary Science), in collaboration with the AIVI (Italian Association of Veterinary Hygienists), organized this Workshop on the most important topic of toxicological emergencies potentially related to seafood. I believe this workshop will provide important indications in the matter, on the basis of the scientific merit of the lectures and the related discussion.
