摘要

The recent report of World Health Organization (2019) says that around 600 million fall ill after eating contaminatedfood. That means food borne diseases are affecting almost 1 in 10 people across the world and causing around 0.42 million deaths everyyear. So basic rules of hygiene must be followed to prevent food borne diseases.Food, safety is a significant health issue. Access to sufficient amount of safe and nutritious food is the key to sustaining life and promoting good health. But unsafe foodcreates a vicious cycle of disease and malnutrition, particularly affecting infants, young children, elderly and the sick. Although governments all over the world are doing their best to improve the safety of the food supply, yet the occurrence of food borne disease remains a significant health issue in both developed and developing countries. These diseases can make a person very uncomfortable and sometimes may prove fatal. The common symptoms are nausea, vomiting, diarrhoea and weakness. The recent report of World Health Organization (2019) says that around 600 million fall ill after eating contaminated food. That means food borne diseases are affecting almost 1 in 10 people across the world and causing around 0.42 million deaths every year. Unsafe food, containing harmful bacteria, viruses, parasites or chemical substances, causes more than 200 diseases - ranging from diarrhoea to cancers. Unfortunately, children under 5 years of age carry 40 per cent of the food borne disease burden, with 0.125 million deaths every year. Amongst that, diarrhoeal diseases are the most common illnesses. The basic reason for the occurrence of diarrhoeal diseases is consumption of contaminated food, which is causing 550 million people to fall ill and 0.23 million deaths every year. Food can be mishandled during purchasing, preparation, handling and storage. However, it can be prevented by following some basic rules of hygiene. Moreover, proper foodpreparation prevents most of the food borne diseases. Cleaning and sanitizing is a critical process and the foundation of food safety in any food operation. Food borne diseases hamper socio-economic development by straining health care systems and harming national economies. Therefore, good personal hygiene practices are an essential part of providing safe food to consumers, and maintaining the kitchen thoroughly clean is vital to food safety. Certain handling practices by consumer at home have been identified essential to prevent food borne illness. These practices are under the direct control of consumers starting right away from purchasing a food to its disposal. To achieve these aims, five basic principles must be followed to ensure food safety.
