FDA's Detroit District issued a warning June 2 to Fiesta Gourmet, Dearborn, Mich., concerning serious violations of federal seafood processing regulations. The agency said its inspection revealed deviations from federal HACCP requirements that caused the food processing facility's tuna salad sandwiches to be adulterated because they were prepared, packed or held under insanitary conditions whereby they may have been rendered injurious to health.FDA said Fiesta Gourmet did not:have a HACCP plan for the refrigerated tuna salad sandwiches to control the food safety hazards of histamine formation, allergens and pathogen growth; and maintain sanitation control records for the eight key areas of sanitation that would document sanitation monitoring and correction of sanitation deficiencies for the tuna salad sandwiches.
