摘要

Aqueous and methanolic extracts of fruiting bodies from 5 xylotrophic fungi (Pholiota squarrosa, P. gummosa, Kuehneromyces mutabilis and Armillaria mellea grown in France, and Pleurotus ostreatus grown in Germany) were analysed for free sugars, amino acids, phenolic acids, glycosides, alkaloids and other nitrogenous compounds. Major components were phenolic acids (4-hydroxybenzoic, 3,4-dihydroxyphenylacetic, 4-hydroxy-3-methoxybenzoic and 4-hydroxycinnamic), free amino acids (alanine, serine, proline, methionine, asparagine and valine), steroid glycosides and choline. No free sugars were detected.
