摘要

The foodborne pathogen Listeria monocytogenes is associated with a variety of ready-to-eat meat products, while vacuum-packed, refrigerated meats may also be contaminated with spoilage organisms such as Brochothrix thermosphacta. The aim of this study was to incorporate the antimicrobial peptide nisin, which is known to inhibit these microorganisms on meats, into a collagen film, and determine its activity when used to package vacuum-packed frankfurters. The study was the first to demonstrate the incorporation of nisin into a collagen film with activity against bacteria associated with ready-to-eat meat products.
