The determination of optimal storage conditions for new apple cultivars is done by large scale storage experiments in which a range of different conditions are tested. Based on quality evaluations during and after storage, the best conditions are selected. This method is not only time consuming and expensive, but it also makes it impossible to develop batch specific optimal conditions. Simulation models can reduce and better focus the amount of required storage experiments. To be able to develop simulation models the physiological changes that occur during storage and how they are influenced by the surrounding gas conditions and by possible pretreatments with e.g. Smartfresh~(TM) (AgroFresh Inc.) need to be understood.A lot of research in this area has been done by Ho et al. (2008) who developed a model to describe gas diffusion in pears. This model describes the distribution of O; CO2 and N2 in pear tissue depending on the surrounding atmosphere.
