Given the increasing consolidation in the U.S. meatindustry, smaller and specialty producers oftenhave difficulty breaking into the market in profitable volumes. This paper examines three cooperative models for specialty beef producers. We offera realistic examination of the potential for successof each model. Based on this, we identify the keyattributes for a new model and offer guidance forfuture research efforts.
