Before you try selling dairy products direct to consumers, ask yourself several questions.Alan Henning spent several days monitoring a supermarket cheese counter and quizzing customers. He found that cheese buyers rarely knew much about the product they'd just purchased. It was then the Cross Plains, Wis., producer realized he had a businessopportunity: Introducing new cheeses made from the milk of his 50 grazing Jerseys. Henning, a former Fulbright scholar who studied grazing in New Zealand, is making money adding value to his milk. He's hired a small cheese plant to convert 6 percent of his production into three types of his "Jersey Gold" cheese that he sells at area farmers' markets and retail stores. Within seven years, he says, he'll be converting all of his milk into cheese.
