The crystallization process consists of two stages: formation of a new of phase particles (crystallization nuclei, CN) and their subsequent growth. If the supersaturation of sugar solution is in the metastable region and there is sufficient movementwithin the solution, the formation of crystal nuclei becomes possible. At that this point of the process seeding agents are introduced in the form of microcrystals. The higher the quality of the seeding agent, i.e. the more similar the size of the seedmicro-crystals (SMC), the more ordered and simultaneous will be the formation and growth of new crystal nuclei. This also makes it possible to avoid the formation of "false grain", to improve control of crystallization, to reduce crystallization time, toobtain more homogeneous final crystals, and, therefore, to gain an advantage in centrifugation, sugar washing, etc. Ideal seeding agents are absolutely homogeneous sucrose microcrystals of a size of about 10 |om having similar geometrical form (they should be as close to a cube as possible, because it is better to have a symmetrical set of physical-chemical parameters of crystal faces). It is also necessary to distribute the seeding agent in the sugar solution as soon as possible and uniformly. A special role is also played by a precise dosage.
