Physiology and functions of fruit pigments: an ecological and horticultural perspective.

This chapter discusses the ecological functions of fruit colour and the role of fruit colour in the production and consumption of domesticated fruits. Topics include: fruit pigments; colour and colour vision; prevalence of different colours and disperser syndromes; physiological and visual functions of fruit color/pigments; link among colour, maturity and quality; and environmental conditions and fruit colour.
