Sulphur performs many important functions in the plant. It is best known for its role in the synthesis of proteins, oils and vitamins. It is a constituent of three amino acids viz. methionine (21 percent S), cysteine (26 percnet S) and cystine (27 percent S) and thus vital for protein production. Sulphur is also a constituent of sulphur - glycosides (mustard oils), coenzyme A, vitamins biotine, thiamine and also iron sulphur proteins called ferrodoxins.
