Every weekday he is on the road scanning the offerings in markets from Cardigan to Carmarthen and Brecon to Haverfordwest.From store cattle to those at point of slaughterjf they meet the criteria the chances are that he will buy them for the Waitrose-branded Hereford beef range. On some days he may only find a handful while on others it could be a lorry load, but he has two other sources to draw on as well in order to meet the ever-growing demand for the quality product.
