摘要

The experimental material consisted of well ripened papaya cv. Taiwan and banana cv. Dwarf Cavendish. Eleven pulp ratios of papaya and banana (100 : 0, 90 : 10, 80 : 20, 70 : 30, 60 : 40, 50 : 50, 40 : 60, 30 : 70, 20 : 80, 10 : 90 and 0 : 100) were studied to select acceptable pulp ratio for blended nectar preparation. The pulp ratios of papaya and banana 100 : 0 and 50 : 50 were found acceptable. The nectar (100 : 0) was stored only up to 30 days under ambient condition. Whereas blended nectar (50
