摘要

Breadfruit (Artocarpus incisa [Artocarpus altilis]) were processed into flour and used to make bread, cake, buttered biscuit and pancake. The physical appearance of the buttered biscuit and the texture of the bread were not acceptable to some members of the assessment panel. The taste of all the products was, however, rated favourably as acceptable.
