More than three years ago, the United States Potato Board (USPB) commissioned a study through the University of California, Davis and the National Center for Food Safety and Technology, Illinois Institute of Technology to determine if the Glycemic Index (GI) of foods played a role in weight loss. Potatoes have been vilified-whipped, smashed and fried-because of opponents who would have consumers believe that this vegetable's designation as a high glycemic food made it fattening. Good news, potato industry... Results confirm what health professionals, nutrition experts and our industry has said for years: when it comes to weight loss, it is not about eliminating a certain food or food groups, rather, it is reducing calories that count. Lead researcher Dr. Britt Burton-Freeman, PhD, MS, explained in a press release publicizing the study on October 8, "There is no evidence that potatoes, when prepared in a healthful manner, contribute to weight gain. In fact, we are seeing that they can be part of a weight loss program."
