Although every season brings its bounty, autumn possesses a bit of an unfair advantage. It's the time of the harvest, when the last of the late summer sun has completed its rounds, having saturated burgeoning fruits and vegetables so that they are plump and bursting with flavor. The heat of July and August and the barbecue but a distant memory, we eagerly turn once again to our stoves. As the air gets crisp, our bodies begin to cry out for heartier fare and for the richer, deeper flavors that resultfrom longer cooking times.
