Lemon grass, as the name implies, has a delightful lemony fla-vor with an additional hint of ginger that blends well with garlic, cilantro, and chilies—the most common herbal ingredi-ents in Asian recipes, Indeed, Indonesians, Malaysians, Sri r Lankans, Singaporeans, Vietnamese, and Indians make frequent use of lemon grass when cooking savory dishes of meat, poultry, seafood, and vegetable curries. Thai and Sri Lankan recipes add lemon grass to coconut milk for chicken and seafood. Asians use lemongrass in teas, pickles, and in flavoring marinades. From these many cultures, lemon grass has filtered its way into the home kitchens of Westerners eager to expand their culinary repertoires.
