Milk is the important part of human diet especially of vegetarians and also of every age group, it is a complete food and is said to be balanced in the form of nutrientsMilk and its products are consumed in one or another form by us daily like tea, coffee, sweets, chocolates, ice creams etc. Milk contains almost all the essential nutrients like vitamins, minerals, fats and proteins. Since ages our ancestors considers milk as a pure and coined the term "nectar" for it. The purity of the milk had led to many quotations in Indian culture "milk is the real nectar for infants", "God bless you with milk and son" were the usual blessings from aged people. But today's milk is not the same old nectar. It contains various types of microbes, toxins, antibiotics and other drugs. These all are hazardous to human health and is the cause of many common diseases, tumors or cancers and resulting into poor health. After mother's milk, cow's milk is the major chunk of young one's/infant's diet. All the contaminants that are excreted in milk can have damaging effect on children's health as the immunity is weak and additionally the growth is hampered. So, it is always kept in mind that the milk or milk products that we are consuming should .be free from almost all type of contaminants. Earlier it was believed that the raw milk from the animal's udder is pure one and can be consumed without any hesitation. That is why people were taking milk directly from the udder even without boiling and some people started the practice of putting milk stream directly into their mouth. With the passage of time, the awareness, and encounter of various diseases and the experience proved that the milk should be consumed immediately after milking without delay as it becomes sour, if itis kept for long times especially during summer season. The view point changed again and finally the boiled milk is considered to be the best milk as it is free from most of the bacteria and also they become ineffective at high temperature or due to boiling. Still the 100% quality could not be guaranteed.
