Many thousands of new finished food products based on ingredients from milk were launched globally during the past decade. All these products require a huge effort in product development and ingredient suppliers play an important role here. Their contribution is usually through the introduction of a limited number of "model recipes" in order to minimize the cost of product development for the customer. The "model recipe" includes both ingredients and its preparation. In these recipes, the specific performance or cost benefits of the ingredients in a finished product can be demonstrated. In a typical scenario, the manufacturer translates the results of the "model recipe" to their product portfolio. The end-product then receives its "unique selling point" and a brand name, so it can be distinguished from competitor products. It goes without saying that the development of ingredients requires a long-term strategy of the dairy supplier, due to the high investments in R&D and the complexity of their production facilities.
