A catfish feed was extruded to determine how particle size, moisture content, and screw speed effect the degree of starch gelatinization, water stability, and pellet durability. Particle size had the most significant effect on the degree of starch gelatinization, pellet durability, and water stability. Smaller particles with higher moisture produced pellets that were more durable and more stable. The degree of gelatinization was highest at 700 µm, 25% moisture, and 400 rpm. The highest screw speed produced pellets that were more water stable for up to 4 h and a screw speed of 300 rpm produced the most durable pellets.
