A PC-based measuring system was developed for on-line multi-channel measurement of the humidity of different food materials during the drying process. It is suitable for investigation of the drying characteristics of raw material pieces in laboratory circumstances and in industrial application as well. The measurement is based on the determination of the resistance of the sample between the needle-type probies in a very wide measuring range. The measurement and the presentation of the results are supported by the computer program developed for system control.
