APPRECIATION OF LEAD AND CADMIUM LEVELS IN SHEEP KIDNEYS IN MOROCCO

Sheep farming is an economic activity very important to the Morocco because it is operated for meat production in order to cover the needs in underserved rural populations in fish products animal protein, for urban consumption or the family and religious ceremonies. This area faces several constraints: the conditions of breeding, food opportunities, quality butchers, health programs and pollution that impacts directly on the pasture and watering. Emissions of the metal elements traces still exist in the natural environment by contaminating the environment and eventually are picked up by the food chain. This study is intended to assess the level of contamination by toxic metal trace elements: lead and cadmium in meat and offal from different parts of the Morocco, the used bioaccumulation assessment matrix is the kidneys, the analysis in summer samples made by atomic absorption spectrometry and the results were processed by analysis test principal components (PCA) and compared to international regulations. The results showed the presence of lead in 100% of the samples during the year 2009, 2010, 2011, 2012 and 2013,while cadmium is detected in 100% of samples of all the years except for 2012 which is only 55.55%. Compared with international regulations, the result shows the daily dose values but does not exceed the maximum recommended doses.
