Alternative meats are garnering a lot of attention and a lot of investments these days. Last year, the sector topped $3.1 billion in investment across the three main areas of the industry: plant-based, fermentation and cell-cul-tured meats. It is safe to say that meat analogs have moved beyond catering to the relatively niche market of vegans and vegetarians. Plant-based meat products are mainstream and the expected release of cell-cultured (lab-grown) meat has proven the demand for animal-free sausages, burgers and patties isn't a referendum on con-ventional meats, it's a complement to the grow-ing demand for protein.
