The driving force in many research programs is to develop new products or equipment that will meet the challenges of being profitable or surviving in a business. Existing materials or equipment that are already available and may offer some hidden potentials may be overlooked. The extrusion of dextrose is, in fact, one of these areas. Advances in starch technology, in combination with traditional ingredients such as dextrose and conventional extrusion processing, have opened a whole new world of confectionery applications.
