ZDS course in chocolate

ZDS (Zentralfachschule der Deutschen Siifiwaren-wirtschaft) is offering a practical course in chocolate confections. The course will be conducted in English and held in Solingen, Germany. Dates for the course are February 14 through February 18,2011. The course will cover - in theory and practice -the raw materials used, how they are processed and the technology of producing dark, milk and white chocolate, couverture and coatings; hollow figures; moulded items; and enrobed products.
