PMCA course on chocolate and compound

PMCA will sponsor a short course entitled Chocolate and Compound Manufacture & Use on June 4-7, 2013, at Wolfgang Candy Company in York, Pennsylvania. The agenda begins with an introduction to chocolate and compound and their raw materials, a review of cocoa bean processing, and discussions about chocolate production and tempering. Enrobing and mouldingwill also be discussed.
