摘要

This book is a 3rd update of the textbook written by R.Carl Hoseney in 1986. The 2nd edition was published in 1994 and sold well. There have been considerable developments in cereal science and technology during the last fifteen years. Jan A. Delcour cooperated with R. Carl Hoseney in this latest edition and this appears to have helped in keeping up with the developments in cereal science and technology. Much useful, novel and applied information such as new uses of enzymes and lipid functionality are provided in this book.
