Rapid lateral flow tests for food allergen monitoring

Current EU legislation recognises 12 foods known to potentially produce severe adverse reactions across the EU. The 12 allergenic foods specified in the legislation were determined by the European Food Safety Authority (EFSA) Scientific Panel on Dietary Products, Nutrition and Allergens. In addition to these, Codex Alimentarius states that celery, mustard, sesame seeds and lupine be declared as allergens. Hidden allergens cause the highest risk for allergic consumers and they mostly come from cross-contaminations in food-producing plants.
