PPROBLEM TO BE SOLVED: To obtain an inhibitor complex which is highly safe as a low-cost foodstuff and has excellent inhibitory effect of intestinal tract permeation on allergen. PSOLUTION: When chitosan is brought into contact with a defatted sesame extract (TSE), TSE is combined with the amino group of the chitosan to form fine particles, and the complex which comprises an active polyphenol analogous compound and/or an active peptide being active ingredients in TSE retained in the fine particles is obtained.
