Due its protein-rich nature, Greek yogurt consumption is onthe rise across the world. Production of Greek yogurt results inthe generation of large volumes of waste in the form of liquidwhey. The resulting whey is rich in sugars and acids that havethe potential to be effectively converted into useful products.One such conversion practice that is widely prevalent isanaerobic digestion of waste to generate methane. Thoughthe demand for biofuels is high, the market operates at a lowerprice for a high capital intensive process. Hence, there is aneed to develop novel processes that can convert waste intohigh value products.
