However, very few are willing to accept restrictions in their life styles or eating habits. The result is a considerable contradiction: a discrepancy between health and enjoyment. In the past, consumers have frequently established that products considered "good for them" in fact dont taste all that good. The challenge for product developers in the food industry is thus to develop products that solve this contradiction.
