The new 'Delight Deluxe' reduced calorie strawberry yoghurt prototype from Cargill Sweetness was among the innovationsrnexhibited by Cargill at FiE 2009.rnThe yoghurt contains Cargill's zero-calorie bulk sweetener Zerose? erythritol which can create reduced-calorie stirred-fruit yoghurts by combining with sucrose and glucose-fructose-syrup in the fruit prep, avoiding the need for high intensity sweeteners. This form of calorie reduction ensures that a product that still tastes good in terms of sweetness and mouthfeel, but avoids the grittiness that can occur when high levels of non-fat milk solids are added to offset the lack of viscosity in sugar-free yoghurt mass.
