In this article I will aim to cover the underlying reason why sodium reduction is currently one of the major foods trends being tackled by processors. I will focus on the use of salt in the processed meat industry, and explain why it is such a critical component for todays added value meat products, and expand on some of the issues faced when salt is taken out or reduced in processed food. Finally I will share the solutions AllinAII Ingredients have developed to help reduce sodium, which are based around a patented sea salt VELONA+®.
