Functional colours from Nature

摘要

The increasing demand for natural, vegetarian and clean label products challenges the food industry to innovate and find alternatives to animal and synthetic colouring agents. Plants, minerals and animals have historically been the source of colours. But due to economical and supply reasons, synthetic agents have been substituted for natural colours in parallel to the rapid expansion of the chemical industry since the nineteenth century.
